Pathways to Wellness is a youth-led nonprofit based in Fort Worth, Texas. We started this organization because we believe wellness should not be a privilege it should be accessible to every single person in our community, no matter their circumstances.

Who we are

We're not a big organization with fancy offices. We're young people from Fort Worth who care about our neighbors and we're building something real.

Why quality food matters
Lower-income families often have access only to cheap, processed food not because they don't want better, but because quality food is expensive. Our donations go directly toward buying fresh, nutritious groceries and meals for those who otherwise wouldn't have access. That's our commitment.

How it all started.

When writing a research paper about ultra-processed foods in my English class, I found that many people, especially in the U.S., consume foods that can cause long-term health conditions like heart disease and obesity.

I knew that not everyone chose to live like that, but that some simply couldn't or didn't know how to live healthier. I wanted to find a way to reach these people and help them.

That's when someone suggested that I start a nonprofit, and I soon got to work to found Pathways to Wellness!

Every month we share a healthy, delicious, and affordable recipe to help give everyone ideas for weekday meals — quick, nutritious, and made for real families.

Veggie Sauce Pasta

A creamy spinach-basil sauce over protein pasta, topped with sautéed zucchini, broccoli & chicken.

What You Need
  • Oil for cooking
  • About 1 cup spinach (pressed down)
  • 1 garlic clove
  • 2–3 fresh basil leaves
  • Salt, pepper & onion powder
  • 2 tbsp pasta water (for starch)
  • ¼ cup low-fat milk (or regular)
  • 2.5oz Barilla protein pasta
  • Paprika & lemon (for chicken)
  • ½ chicken breast
  • ½ cup zucchini
  • ½ cup broccoli
  • ¼ cup skim mozzarella (for topping)
Instructions

Cook the Chicken
Cut a chicken breast in half. Heat olive oil in a pan over medium. Season with garlic powder, salt, pepper, and paprika. Cook 5–7 minutes per side until internal temp reaches 165°F. Let it rest.

Cook the Pasta
Boil Barilla Protein Pasta in salted water for 11–13 minutes. Strain — don't rinse. Reserve 2 tbsp of pasta water before draining.

Cook the Vegetables
Slice zucchini thin and cook in olive oil over medium heat for 8 minutes. Add broccoli, season, and sauté until light brown (~9 more min). Set aside.

Make the Sauce
Blend spinach, garlic, basil, seasonings, pasta water, milk, and a squeeze of lemon until smooth. Add more liquid for a thinner sauce.

Plate & Serve
Toss pasta with the sauce, top with sliced chicken and vegetables. Finish with shredded mozzarella and chili flakes if you'd like some heat.

Fresh Street Tacos

Lean seasoned meat with fresh veggie toppings on warm corn tortillas. Serves about 4 people.

What You Need
  • 1 head of lettuce
  • 2 Roma tomatoes (or 1 large)
  • ½ a small onion
  • 1 avocado
  • 1–2 limes
  • Corn tortillas
  • 16oz lean ground beef or turkey
  • Seasoning of choice
  • Oil of choice (olive oil recommended)
  • Skim mozzarella or cotija cheese (optional)
Instructions

Season the Oil
Drizzle oil onto a medium pan over high heat. Add your spices and stir until they sizzle — be careful not to burn them.

Cook the Meat
Add your ground meat and lower the heat to medium. Stir and cook until done.

Prep the Toppings
While the meat cooks, shred the lettuce, dice the tomatoes, slice the avocado, and dice the onions.

Warm the Tortillas
Heat a separate pan on high with a little oil. Add corn tortillas and cook 30–45 seconds per side.

Assemble & Serve
Fill tortillas with meat and toppings. Squeeze lime juice over the top for extra flavor. Add cheese if desired.
